Ingredients:
2 Cooked sausages,
2 tablespoons of basil,
2 tablespoons of parsley,
1 Medium onion
2 tablespoons of garlic powder,
50g Mushrooms,
50g Sweetcorn,
2 Peppers
800g Chopped Tomatoes,
250g Pasta
Vegetarian?
Why not swap the sausages for more veg e.g aubergine or courgette
Why not try?
If you have any leftovers you want to use up, you could swap the sausage for any other cooked meat e.g burger, meatballs etc...
Method:
1. Cut the onion and put into a large saucepan and fry till soft.
2. Slice the sausages, mushrooms and peppers into small chunks,
3. Add the chopped tomatoes to the saucepan
4. Add the sausage, mushrooms, sweetcorn, basil, parsley and garlic.
5. Stir together.
6. Cook on a low heat for 20 minutes.
7. 5 - 10 minutes before sauce is ready, put pasta in a saucepan with boiling water.
8. Dish up and enjoy!
